About 日山 Hiyama (合和酒店)
The second branch of Tokyo’s Michelin-recognized sukiyaki restaurant, "Sukiyaki Kappo Hiyama", is set to open in the newest Hopewell Hotel in Wan Chai, bringing an unparalleled sukiyaki experience to all wagyu enthusiasts!
Following the first branch in Tsim Sha Tsui, which boasts breathtaking harbor views, the Wan Chai branch has been designed as the “Hong Kong Flagship Store”, recreating the unique charm of Hiyama's century-old original location in Nihonbashi, Tokyo. Rare, priceless antique pieces from the Tokyo main store have been carefully selected and displayed in the private dining room, allowing guests to immerse themselves in a Tisho era Tokyo right here in Hong Kong.

We had a really enjoyable meal here 🥩✨ The wagyu was beautifully marbled, tender, and full of flavour, especially the ribeye, which practically melted in the mouth. The sukiyaki-style preparation was rich but well balanced, and the staff cooked and explained everything clearly without making the experience feel too formal👍🏻 The small dishes, comforting udon, and refreshing fruit at the end made the meal feel nicely paced and complete 🍜🍈 Overall, a lovely spot for a special Japanese wagyu dinner! 😊

Celebrated our 74-month anniversary at Hiyama in Hopewell Centre with their A5 Wagyu sukiyaki set ($698). Three premium cuts (chuck cap, chuck eye roll, and chuck flap) totaling 160g were beautifully marbled and very tender. The sukiyaki sauce was rich and authentic. Appetizers were refined and the pink pineapple dessert was refreshing. Tableside cooking added a nice touch. Great value and atmosphere for a special occasion!

The century-old sukiyaki restaurant Hiyama has been awarded 𝗠𝗶𝗰𝗵𝗲𝗹𝗶𝗻 𝗢𝗻𝗲-𝘀𝘁𝗮𝗿 for ten straight years, and everything starts with carefully selected premium Wagyu, paired with a secret sukiyaki broth airlifted from its Tokyo branch. I tried the日山 · 春祭𝗛𝗶𝘆𝗮𝗺𝗮 𝗦𝗽𝗿𝗶𝗻𝗴 𝗙𝗲𝘀𝘁𝗶𝘃𝗮𝗹 𝗠𝗲𝗻𝘂 and it felt like a warm, delicate, and quietly impressive journey through Japanese comfort food—especially the A5 Wagyu sirloin and Okinawa Agu pork. The highlight, of course, was the sukiyaki: the aroma was warm, woodsy, and fragrant, and the beef was tender and buttery, melting in your mouth. The miso brought a savory, slightly smoky finish that made each bite even better.

This was the first time we went to Hiyama Hopewell, lucky enough for us to reserve a big tatami room for our birthday celebration! The room is spacious and private, the Japanese vintage decor enhance the dining experience, particularly I like the ceiling lamp! We previously had been Hiyama TST so we already have certain expectation to the food, of course this time they didn't disappoint us too. The seasonal fruits was a great surprise, the pink pineapple tasted very refreshing after a full meal, perfect ending for the night. It was a very pleasant meal and would like to come back again. Truly recommend small group who would like to get a cozy, private dining experience.

I had previously dined at this Michelin-starred sukiyaki restaurant in Tsim Sha Tsui, so I had certain expectations. This location exceeded them and was even more enjoyable for my friends and me. They offered a wide selection of sake cups and over ten pairs of colorful, authentic Japanese chopsticks, making the selection fun. The private room allowed us to focus on the detailed introductions of each dish. We watched the staff grill the sukiyaki while taking photos, and our server engaged my friends in conversation, demonstrating impressive multitasking. I forgot to capture the dessert, a refreshing sorbet with rare pink pineapple, which I knew was exceptional from a previous tasting at a friend’s house. This shows the restaurant’s attention to detail. Overall, for the price, the food quality, service, and experience were outstanding. We truly had a wonderful time!
